The 6-inch blade is just the right length for precise work around joints and bones, and the flexibility really helps me get every bit of meat off a salmon frame. It held its edge perfectly through a whole afternoon of breaking down chickens.
I was a little skeptical about a six-inch blade being enough for larger cuts, but the flexibility makes precise work of chicken thighs effortless. The Damascus pattern is also a beautiful bonus — it's held an edge through four whole fish without needing a touch-up.
This blade glides through salmon skin like it's not even there. The flexibility is perfect for following rib bones without gouging the meat, and that Damascus pattern is just beautiful.
That first slice through a chicken thigh was effortless—the blade's flexibility let me follow the bone curve perfectly. Cleaned a whole bird in half the time it usually takes with my old knife.
Used it on a whole salmon last night and that flexible blade slid right along the ribs without tearing the fillet. The Damascus steel pattern is gorgeous in the hand, and it held its edge through the entire fish without needing a touch-up.
Finally got this to try breaking down a whole chicken, and the flexibility of the blade made it way easier to get around the joints than my old stiff knife. Wish it came with a guard for the tip, but the edge is seriously sharp and held up through a couple of birds without needing a touch-up.
I’ve used quite a few flexible blades for trimming salmon, and this one glides through the skin with almost no effort. The handle felt solid and comfortable even after filleting a whole catch. Only wish it came with a sheath for safer storage.
