The Damascus steel pattern on this blade is gorgeous and it takes an edge that holds up through a week of meal prep. Slicing through a dense sweet potato felt like cutting butter, which surprised me for a knife this size.
This 5-inch blade is incredibly nimble for detail work, yet it still powers through a butternut squash with no trouble at all. The Damascus pattern on the steel is beautiful, but more importantly, the edge arrived shaving-sharp and held up through a week of heavy meal prep.
I was worried a smaller knife wouldn't handle thick cuts, but this one glides through butternut squash like it's butter. The blade's sharpness right out of the box is genuinely impressive.
The blade took an incredible edge right out of the box and still feels razor-sharp after a week of daily use. It's the perfect size for quickly slicing through a bagel without the awkward bulk of a chef's knife.
I've had this knife for about a month now, and the handle feels perfectly balanced in my hand—makes quick work of tomatoes without smashing them. It's already become my go-to for everyday slicing tasks.
